Here’s another recipe that I found on All Recipes, with some of my own modifications.
I made this for the second time last night, and Rhonda says that this is the only dish that gives my stir-fry competition for her favorite meal. I’ll try to get that stir-fry recipe up later today or tomorrow. For now, though, here’s my recipe for Braised Balsamic Chicken:
INGREDIENTS
* 6 skinless, boneless chicken breast halves (while you’re cutting them in half, you could just as easily cut them into smaller pieces, but be warned – smaller pieces dry out faster)
* ground black pepper to taste
* 1 teaspoon garlic salt and/or 1 teaspoon minced garlic
* 2 tablespoons olive oil
* 1 onion, thinly sliced
* 1/2 cup balsamic vinegar
* 1 (14.5 ounce) can diced tomatoes
* 1 teaspoon dried basil
* 1 teaspoon dried oregano
* 1 teaspoon dried rosemary
* 1/2 teaspoon dried thymeDIRECTIONS
1. Season chicken breasts with ground black pepper and garlic salt.
2. Saute onions and (optional) minced garlic in medium – sized skillet. Rhonda and I both really like garlic, so I use the garlic salt and the minced garlic, you can use either/or, really. I saute my onions, garlic, and the chicken in the next step at roughly half-heat, at the six o’clock position (for those with electrical stoves, set heat at 5.)
3. Add chicken breasts to to onions and (optional garlic) and brown.
4. Pour tomatoes and balsamic vinegar over chicken, and season with basil, oregano, rosemary and thyme. Simmer until chicken is no longer pink and the juices run clear, about 15 minutes. In my experience, you can’t really tell when the juices run clear, so I recommend setting your burner to the 10 o’clock position (if you have an electrical stove, set the heat at 2) and going with the 15 minutes, flipping the breasts roughly every five minutes.
This can go with plenty of sides, like garlic mashed potatoes (I told you I like garlic!), steamed green beans, or just over some pasta. We last ate this over some whole wheat angel hair pasta for a healthy, low calorie dinner.
